Baked Cinnamon French Toast

This casserole style dish start with layers of cinnamon bread slices lining the bottom of a baking dish. A mixture of eggs, milk, whipping cream, granulated sugar and vanilla extract are poured over the bread slices and allowed to absorb into the bread before the dish is baked in a hot oven. Individual servings are topped with warmed blackberry preserves.

Ingredients -

12 Cinnamon Bread Slices, divided
1/4 cup Butter, softened
9 Eggs
1 quart Milk
2 cups Whipping Cream
1 cup Sugar
4-1/2 teaspoon Vanilla Extract
warmed Blackberry Preserves

 
Preparation:

1. Place 6 slices of bread in the bottom of a 13x9 baking dish that has been greased with butter.

2. Butter the remaining 6 slices of bread.

3. Layer on top of the other slices, butter side facing up.

4. Whisk the eggs in a mixing bowl.

5. Add the cream, milk, sugar and vanilla and beat well to combine.

6. Pour the mixture over the bread and allow to sit for 20 minutes.

7. Place the baking pan into an even larger baking pan.

8. Fill the larger pan 1 inch with boiling water.

9. Bake for 40 minutes, uncovered, in a 375 degree oven, or until a knife inserted in the center of the dish come out clean.

10. Allow the dish to stand for 10 minutes before serving.

11. Top with blackberry preserves.

 



Making French Toast -
Stale or Dry Bread
French toast is a great way to use stale bread. Stale bread absorbs more of the milk and egg mixture without getting soggy or falling apart, which results in a wonderful custardy texture and rich taste. If stale bread is not available, cut the bread into slices the night before the French toast will be made and leave it on the counter.

Making French Toast -
Frying in Butter
French toast tastes best when it is fried in real butter. Heat the griddle or skillet to a medium-high temperature before adding two tablespoons of butter. Let the butter melt, but avoid letting the butter brown. Wipe the griddle and add more butter between each round of French toast to avoid overcooking the butter and creating toast with a burnt taste.
